It’s nearly spring (at least in Northern California) and when Abbie told me an Irish fairy tale called The Fairy Dance, I got caught up in the romance of the story and couldn’t stop thinking about those warm spring nights that are just up ahead. In the story, a young girl finds herself dancing with a mysterious yet beautiful young man and is whisked away into his world and is generously offered some food and wine. But, if you know anything about fairies, let it be this: DO NOT drink the fairy wine.
This dreamy and whimsical Irish folk tale instantly made me want to create a cocktail in its name, inspired by the dizzying and amorous feeling you get after a night of dancing and drinking what I imagine fairy wine might taste like. I chose to put a floral spin on one of me and Abbie’s favorite drinks: the French 75.
I highly recommend listening to some beautiful music while making and drinking this gorgeous cocktail. Abbie made a perfect playlist to go along with it so check it out!
The Fairy Dance
- 1.5 oz gin
- .5 oz hibiscus or rose simple syrup*
- .5 oz rosemary simple syrup
- Just a squeeze of fresh lemon juice, or to taste
- Chilled sparkling wine, to top up
- Edible flowers, to garnish
Fill a cocktail shaker with ice. Add gin and syrup, shake vigorously and strain into a coupe glass. Top up with chilled sparkling wine.
*Any floral simple syrup will do. I used these.
For the rosemary simple syrup, I made my own:
Rosemary Simple Syrup
- 1 cup water
- 1 cup white sugar
- 3 sprigs of fresh rosemary
In a small saucepan, bring sugar and water to a boil, simmer until sugar is dissolved. Add fresh rosemary and let continue to simmer for about 10 minutes. Remove from heat and let cool completely. Strain rosemary.
